Quick Cucumber Salad for One

Ingredients for Lunch



Chopped fresh from garden


Bon Appetite !



Quick Cucumber Salad for One


1 small fresh cucumber, peeled and diced
1 roma tomato, diced
1 Tb. purple onion, chopped
1 5oz. can water-packed tuna (I like solid), drained and flaked


Place in bowl and drizzle with Brianna's Blush Wine Vinaigrette dressing, and a couple of splashes of seasoned rice vinegar. Sprinkle with fresh ground black pepper.

Optional add-ins: sliced pepperocinis, sunflower or sesame seeds, sliced olives, or shredded parmesan cheese (be creative!)

Sometimes we do the things we DON'T love, simply because we DO love! Does that make sense? Whether cooking, vacuuming, changing diapers, laundry or bathrooms (or all of the above) sometimes we do these things:
  1. because they need to be done
  2. because no one else seems to be volunteering
  3. because we really like them done
  4. because no one can do it as well as we can
  5. because it is something we can do for others to show our love in service

What a difference I've noticed when I just make a shift in my own thinking --- suddenly my feelings also shift! Instead of feeling "put-upon", I find myself being "filled"... what a healing and blessing... just by re-inviting love into the experience.

Can anyone say "pasta"?


Black Forest Cupcakes

Just place a small cookie scoop of dark chocolate cake batter in cupcake paper, follow up with a dollop of your cherry pie filling (homemade is the best), and top it with a little more cake batter to cover it. Bake and frost, using a very large star tip for quick glamour.


Grilled Chicken with a Sauce Sampler

(1)Smoky Sweet Sauce

3 c. (40 oz. bottle) ketchup
3/4 c. apple cider vinegar
2/3 c. molasses
1/4 c. water
1 Tbs. Worcestershire sauce
2 tsp. paprika
2 tsp. liquid smoke
1/2 tsp. ground red pepper
1/4 tsp. garlic powder
1/4 tsp. salt
1/8 tsp. celery seed
In a medium saucepan, combine all ingredients; bring to a simmer. Simmer for 5 minutes, stirring occasionally. 'Specially good used to baste and serve with grilled flank steak.
(2) Creamy White Sauce
2 1/2 c. mayonnaise
2/3 c. white vinegar
3 tsp. sugar
1 1/2 tsp. ground black pepper
1 tsp. salt
1 tsp. hot sauce
1/4 tsp. onion powder
optional: 3 Tbs. Hidden Valley Ranch powder
In a medium bowl, combine, cover, and refrigerate for 2 hours. Serve with peach-preserve glazed chicken.
(3) Tangy Tomato-Vinegar Sauce
1 3/4 c. ketchup
1 1/ c. white vinegar
2 Tbs. dark brown sugar
2 Tbs. Worcestershire sauce
2 Tbs. yellow mustard
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. paprika
1 tsp. hot sauce
1/2 tsp. ground black pepper
1/4 tsp. celery seed
In a medium saucepan, combine all ingredients; bring to a simmer. Simmer for 5 minutes, stirring occasionally. Serve with grilled pork chops, etc.
